After you have reset your User Interface ? Does it turn itself on during a play session or do you turn it off and the next time you log in it is back on?

If that is the case it sounds like you are running Windows 7 or Vista and you'll need to run World of Warcraft as the Administrator for the file to save so your selection remains.
